Munchie Mondays ~ Chicken and Spinach Pasta Bake

I won’t lie to you, I have nothing for today, so I went on Pinterest and found the most amazing looking recipe I could find at 8am…this one made my stomach growl, and I am definitely going to make if for my family when they get here this week!
So here we go!!
Ingredients:
8 oz uncooked rigatoni
1 tablespoon olive oil
1 cup chopped onion
1 (10 oz) package frozen spinach, thawed
3 cups cubed, cooked chicken breasts
1 (14 oz) can Italian-style diced tomatoes, drained
1 (8 oz) container Philadelphia chive & onion cream cheese
½ tsp salt
½ tsp pepper
1½ cup shredded mozzarella cheese
Directions:
Prepare rigatoni according to pkg directions.
Fry onion until translucent in olive oil. Place in large bowl.
Drain chopped spinach well, pressing between paper towels.
Stir in rigatoni, spinach, chicken, & next 4 ingredients into onion in bowl.
Spoon mixture into dish & sprinkle evenly with shredded mozzarella cheese.
Bake covered at 375 for 30 minutes, uncover & bake 15 more minutes or until bubbly.
