Homemade Macaroni and Cheese…

This is my all time favorite comfort food. On a cold winters day, when you are all snuggly inside with a good movie playing…doesn’t get any yummier than that!!!
What you need:
- 2 cups uncooked macaroni
- 5 cups boiling water
- 1/2 tsp salt
- 1/4 very thinly sliced red onion
- 3 tbsps butter
- 2 tbsps flour
- 1/4 tsp pepper
- 1/2 tsp salt
- 2 cups milk
- 2 cups cubed old Cheddar cheese
What you do:
Boil water and salt, cook macaroni according to package directions.
To make cheese sauce, saute onion in butter until transparent and tender. Stir in the flour, salt and pepper. Add milk all at once, cook and stir until thickened and bubbly. Cook and stir 1 to 2 minutes more. Add cubed cheese, stir until melted.
Use a 1 1/2 quart casserole dish, put macaroni in dish, add cheese sauce, spreading evenly over the macaroni. Grate extra cheese and cover the top of the macaroni. Bake in a 350° oven for 30 minutes. Makes 6 servings.
