Homemade Sausage Rolls

If you want to get in good with Santa this year, forget about the cookies and leave him some homemade sausage rolls instead. Trust me, he loves these.

They are a wee bit time consuming to make, but definitely worth the effort, your family will eat them up! Or at least mine does :) I would never be forgiven if I didn’t have these ready for Christmas morning…

What you need:

Breakfast Sausages, partially cooked. I only cook them enough to get the grease out of them, so basically brown them.

For the pastry:

I always use the Tenderflake recipe that is on the box, it is foolproof and turns out beautifully every. single. time.

This makes enough dough for two full pies, I made approximately 112 sausage rolls with the full recipe.

  • 5 1/2 to 6 cups flour
  • 2 tsp salt (you can adjust this if you want, I didn’t use any this time…because I forgot…and they still  turned out fabulous)
  • 1 lb Tenderflake pure lard
  • 1 tbsp vinegar
  • 1 egg lightly beaten
  • cold water
  1. Mix together flour and salt.
  2. Cut in Tenderflake lard with pastry blender or two knives until mixture resembles coarse oatmeal.
  3. In a 1 cup measuring cup combine your vinegar and the beaten egg. Add water to make 1 cup. Gradually stir liquid into Tenderflake mixture. Add only enough water to make dough cling together.
  4. Gather into a ball and divide into portions. If desired, wrap unused portion and refrigerate or freeze.
  5. Roll out onto lightly floured surface.

At this point you want to cut the dough into slices that you can wrap sausages in. Use a bit of water on the end of each piece of pastry to hold the dough together.

You will end up with this:

Bake in preheated oven at 375 degrees for approximately 20 minutes, adjust this accordingly, you want the crust to be lightly browned.
