This is to die for, super easy to make and melt in your mouth good…I doubled it for the party, there was more than enough for about 20 servings.
What you need:
- 4 egg whites
- 1 cup white sugar
- 1/2 tsp vanilla
- 1 tsp vinegar
- 2 cups whipped cream
- fresh fruit, strawberries, kiwi and blueberries are my favorite.
- 1/2 toasted slivered almonds, optional
What you do:
Whip egg whites until they form peaks.
Gradually add sugar, vanilla and vinegar.
Continue beating until very stiff and sugar is dissolved ( I find this can take a while, even up to about 10 minutes with mixer on med high, you don’t want it to be grainy…test it first, like I mean stick your clean finger in the bowl and taste it…really it’s a must :)
Spread onto a cookie sheet with parchment or wax paper in a circle slightly smaller than desired size. (I did mine in a square because I am a rebel…)
Bake for 1 hour at 275 degrees. Turn off oven and leave meringue several hours to dry. Top with whipped cream fresh fruit and almonds.
