I make these every year for Christmas. Well except last year, because we were flying around in Helicopters and in the Hyperbaric Chamber and stuff. So I didn’t have time.

This year, I am making them. Today. Oh I also have a mini freezer now, which is awesome to get stuff stocked up. So here is my favorite and pretty much foolproof (nevermind) recipe for Shortbread cookies.

What you need:

  • 3 cups flour
  • 1/2 cup cornstarch
  • 1 cup icing sugar
  • 1 lb butter
  • 1/2 tsp almond or vanilla extract

What you do:

Cream butter adding sifted sugar gradually, work until creamy. Sift flour and cornstarch,  add to creamed butter and sugar mixture, whipping until fluffy.

Beat in flavoring.

May be dropped from a spoon or rolled. I like to roll mine and add decorations.

Bake at 325° until golden, about 10-15 mins, depending on your oven. These freeze really well :) I will probably have to make another batch before Christmas because everyone I will eat them, before we are anywhere near the holidays.

    Once more … my nieces and nephews will love these cookies. I’ve never made shortbread before, but it’s such a versatile cookie dough! Thanks for posting and I’ll be tweeting this now :)

      It is really easy to make these cookies. I was going to freeze them but before they even made it down to the freezer my brat kids had eaten half of them :)
