Mud Hen Bars…

This is the first time that I have made these bars…it’s definitely not going to be the last. They are amazingly delicious.

I made them last night, and yes…I had two pieces for breakfast. Before I even had coffee. It’s my birthday week, I can do what I want.

They are stupid easy to make.

The name is bizarre…there is nothing muddy or hen-like about these bars at all. Really. The are also not as sweet as you think they would be with the ingredients you use.

It’s the texture. Crunchy, chewy and pastry like…oh my!!

Mud Hen bars

What you need:

  • 1/4 cup shortening
  • 4 Tbsp butter, room temperature
  • 1 cup granulated sugar
  • 1 tsp vanilla
  • 1 whole egg + 2 eggs, separated
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup mini marshmallows
  • 1 cup semi-sweet chocolate chips
  • 1 cup light brown sugar, packed

What you do:

Preheat 350°

Spray a 9×13 baking pan lightly with cooking spray. (Bruce was using my pan, so I faked it with a tin foil one and parchment paper…it actually made it super easy to lift the bar out of the pan!!)

In a large bowl cream together shortening, butter, granulated sugar, 1 whole egg plus 2 yolks and vanilla until smooth.

Add in flour, baking powder and salt and mix until just combined. Spread in prepared pan.

Top with chocolate chips and mini marshmallows.

In a clean mixing bowl with whisk attachment on your mixer, beat the 2 remaining egg whites until stiff peaks form, about 2 minutes on high.

Fold in 1 cup light brown sugar and stir until combined and there are no lumps.


Spread on top of chocolate chips and marshmallows.

Bake 30-35 minutes until top is golden brown.

Allow to cool completely before cutting into squares.

You will thank me for this one…and don’t feel guilty at all…it’s my birthday, and it’s ok…cause I say so!!!
