On my never ending mission to try and find new ways to eat kale and other veggies and fruit, I have discovered the perfect breakfast.
That’s right…it’s perfect.
In every way.
It is delicious, nutritious and fills you up.
Some days it is green, some days it is pink, some days it is purple.
It all depends what you add to it.
But here is the base of my breakfast smoothie every morning.
Feel free to add any fruit that you like in place of what I have, that way it is like a surprise every day.
What you need:
- 2 large handfuls of spinach, or about 2 cups
- 1 cup kale of any kind
- 1 cup yogurt of your choice ( I seriously use every kind there is, vanilla is delicious) you could also substitute almond milk here if you like
- 1 1/2 cups juice (I love blueberry) if you are counting calories you could use water instead
- 1 very ripe banana
- 1 cup of chopped strawberries or blackberries or pretty much any fruit that you love!!
- 1 good sized cup of ice
What you do:
Put it in your blender and beat the crap out of it. I beat it until the ice is pretty much gone and it is good and mixed up…
This morning I even put some sunflower sprouts in that were on their way out. If it’s green it’s in there…
It’s not a perfect science and mostly you can only taste the fruit…experiment a little and see what you can come up with!! Any great ideas to share, leave them in the comments, I would love to hear your thoughts!
